What we're thinking about Games-time food
David, Head of Environment and Sustainability at 2012
Sustainability will be central to the Games Food Strategy, which we plan to publish later this year. We are currently discussing with a range of experts across the food and hospitality industry about issues.

These include:

  • Catering for diverse dietary and cultural requirements
  • Featuring local and seasonal options
  • Animal welfare and environmentally-responsible farming practices
  • Fairtrade and other ethical sourcing considerations
  • Food safety and hygiene

Our challenge is to address these and many more issues within the context of a massive but short-term logistic operation – approximately 12 million meals to be provided across dozens of venues over the period of the Games. 

On top of this we also have to think about legacy. How can our approach inspire lasting change in the hospitality sector and locally, without our short-term requirements putting undue pressure on fragile supply chains?
  
But that is also what is so exciting; everyone can relate to food, so it is the perfect means to demonstrate sustainability at the heart of one of the most important aspects of the Games experience.
